Our Story

Fugaku Sushi is a family-owned restaurant dedicated to providing the freshest sushi and authentic Japanese cuisine. We focus on the pure essence of ingredients and genuine Japanese flavors, offering refined sushi and rich Japanese dishes in a cozy, neighborhood setting. Our menu features expertly hand-crafted sushi, delicate sashimi, and a curated selection of Japanese sake and craft beers. With our warm atmosphere, we hope to be a gathering place where neighbors can share delicious food and build community.

Our story began in downtown Bellingham in 2006. Chef Billy was the owner and sushi master of Makizushi, a beloved spot within the Public Market. There, Billy and his mother devotedly crafted sushi for the community for 12 years. That period was not only a crucial time for him to refine his sushi artistry but also the beginning of the deep emotional connection we have with our neighbors.

When the Public Market closed in 2018, our passion for Japanese cuisine did not end. That August, we opened our restaurant in Fairhaven, and we are deeply grateful to have weathered the challenges of the Covid pandemic and continued to serve our cherished guests.

To look toward the future and honor intellectual property rights, we decided to update our brand identity. Effective July 1, 2025, our restaurant will officially operate under the name “Fugaku Sushi.” This change was made because the name “Fujisan” had been previously registered as a trademark.

​

The new name, Fugaku, is a classical and poetic term for Mount Fuji. It symbolizes excellence, cultural depth, and refinement — values that perfectly reflect the philosophy we continue to uphold in our cuisine and service.

Today at Fugaku Sushi, some guests may recognize the familiar tables and chairs from our old Public Market days. Though they carry the marks of time, they also hold the warmth of countless shared meals and memories — a gentle reminder of where our journey began and the friendships that continue to inspire us.
